I am the mother of two wonderful daughters, Gabriela and Gina, and this cookbook was inspired by and written for them. About 7 years ago, I was a working mom, part-time actress and all-around busy lady when I came to the realization that I needed to get more organized in order to put our family meals on the table. So I sat down and listed the requirements that had to be met: the meals had to be quick, easy to make, and appeal to everyone's taste so I could feed all four of us with the same food (I am not a short order cook nor do I want to become one!).
The other thing I found was that the more I let them work in the kitchen and be in on the food choices, the better they ate. I heard less, "I hate this!" and more, "I helped make this, doesn't it taste yummy?" I also learned that a couple of tricks didn't hurt either. Creatively renaming foods to sound silly made once inedible dishes appealing. Also, turning fruits and veggies into faces, people, or pieces of art, or using cookie cutters on sandwiches and whole wheat pancakes makes the little ones happy campers (and eaters).
